Matcha is a shade tea. 2 weeks before picking, the tea bushes are put in the shade with mats or tarps. The shrubs respond to this by producing extra chlorophyll. Chlorophyll provides, among other things, the green color. Good Matcha has a sweet, savory taste.

- You make an infusion from the traditional green tea. The green tea leaves are infused for a few minutes, the leaves are then thrown away and the infusion is drunk> in other words, a lot of nutrients are lost.
- With matcha, the tea is ground into powder, with this powder you pour hot water, the tea is mixed with the water and all the active substances from the tea leaf are drunk.
